WHY IT IS DOUBTFUL?

Amylase is an enzyme that breaks down complex carbohydrates into simpler sugars and is commonly used in food processing. The permissibility of amylase (E1104) would depend on its source and production process. If amylase is derived from halal sources, such as plants or microorganisms, and its production process does not involve any haram ingredients or methods, then it would be considered halal. However, if amylase is derived from haram sources, such as animals not slaughtered according to Islamic dietary laws, or if it is produced using haram methods, then it would be considered haram.
